We are in the thick of baseball season and in foodie news, the Boston Red Sox have named Nellie’s Free Range Eggs the official egg of the team. Since the beginning of the partnership, all egg dishes being served at Fenway Park are made with Nellie’s eggs. In honor of this partnership, I’ve come up with an easy and fun recipe that’s perfect to fuel up for a busy game or to watch a game from home, Breakfast Pizza!
This dish bakes quickly, lets you customize it and uses delicious and nutrient-dense Nellie’s eggs as the star. Nellie’s eggs are Certified Humane, which means the hens have plenty of room to frolic and have a more varied diet which leads to healthier hens and healthier eggs. Their eggs have a bright golden color. Eggs are the perfect protein punch to fuel your day. This recipe also cooks up quickly so it’s a quick way to get a hearty breakfast that sets your day in motion. You can have it ready before a morning practice or you can have it ready to go before you’re ready to head to the stadium to watch a game for yourself! 2 whole wheat pitas
1 tablespoon olive oil
1/2 cup mozzarella cheese, shredded
1 tablespoon garlic powder
1 tablespoon oregano
1/2 cup frozen spinach, thawed and squeezed dry
4 pieces of bacon, cooked crisp and crumbled
2 Nellie’s Free Range Eggs
1) Heat broiler to 450 degrees.
2) Place a pita on a baking sheet. Brush with 1/2 tablespoon of olive oil. Sprinkle 1/4 cup mozzarella cheese and sprinkle garlic powder and oregano.
3) Take some spinach and bacon and make a circle around the middle of the pita. Crack an egg in the middle and place under the broiler for 7-10 minutes until the egg whites are set and the egg is cooked to your liking.
