This recipe is the perfect mix of tangy, sweet and spicy! We made these on one of our last warm weekends and they were perfect. The chicken cooked up with a nice char and the peppers and sauce added a ton of flavor. We really loved the way that these came out and had zero leftovers for this meal! These were cooked on medium low heat directly on the grill. If you use a grill pan on your stove, make sure you keep an eye on them so they don’t burn.
4 boneless, skinless chicken breasts cut into bite size pieces
12 slices bacon, sliced into pieces
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 green bell pepper, chopped
1 cup BBQ Sauce ( I use this)
1) If using wooden skewers, make sure you soak them for at least 30 minutes before using.
2) Begin assembling the skewers with the chicken, bacon and peppers. Heat grill over medium low heat.
3) Place onto grill and brush with BBQ sauce. Grill for about 5 minutes onto each side until chicken is cooked and bacon is crispy. Brush BBQ sauce on all sides.
4) Serve immediately.
