I just started making this and it was a big hit. Very easy, low prep and reheat well for leftovers or to bring them out for a portable breakfast! You need a cupcake pan for this (you may notice by now my love affair with meals you can make in a cupcake pan)

Ingredients:

12 eggs

12 pieces of bacon

1/2 cup of shredded cheddar cheese

Salt, pepper and garlic powder to taste.

 

Instructions:

1) Preheat oven to 350.

2) Wrap a piece of bacon around base of each cupcake hole.

3) In a large bowl mix the eggs, cheese and spices.

4) Fill each cup about 3/4 of the way up. Overfill and the eggs will overtake the pan while baking.

5) Bake for 30 minutes.

 

When done you may need to use a fork to loosen the bacon from the sides but it should come off pretty easily. Let cool for a few minutes and enjoy!
